I'm addicted to the creamy goodness of this broccoli cheddar soup. It takes me back to a childhood lunchroom staple of broccoli smothered in warm, gooey cheese. It's comfort food that tastes so bad you won't believe it's good! You can't go wrong with a simple, healthy recipe:
If you have a high speed blender like a Vita-mix (highly recommended!) you can let this soup run longer in the blender to heat it up. If you don't, you can simply pop your soup into the microwave. Don't try to make it hot! Just gently warm it in the microwave.
I adapted this recipe from Handmade in The Present Moment, a cookbook that generously shares all of the recipes offered by my all-time favorite restaurant, The Present Moment Cafe in St. Augustine, Florida.

ReplyDeleteOh, that's no fun! I do need to share more healthy raw vegan recipes that don't feature nuts. You can use veggies like zucchini to add creaminess to a lot of recipes. I love the recipes shared on this YouTube channel for ideas: http://www.youtube.com/user/RawfullyOrganic

DeleteLooks yummy! I wish I could eat raw broccoli though. Every time I eat raw cabbagey foods I get gallbladder attacks and feel like I'm dying. :P I have recently become obsessed with vegan ranch dressing. Have any good recipes for it? :)
ReplyDeleteI do! If you blend dill, cashews, a pinch of salt and pepper, garlic powder and onion powder to taste and zucchini (I'd say 1/4 cup cashews, 1 to 2 zucchinis, and as much Dill as you want) you'd get a dressing that's a lot like ranch but even yummier!

With this recipe you could cook the broccoli florets and add them to soup base. It would be delicious!
